Not only are sweet potatoes delicious, they’re also super good for us!
I always say they’re the best carb you could ever eat.
Sweet potatoes are an excellent source of vitamin A (in the form of beta-carotene). They are also a very good source of vitamin C, manganese, copper, pantothenic acid and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus. –whfoods.org
Though rich in vitamins and antioxidant nutrients, my favorite thing about sweet potatoes is that they’re so versatile.
You can bake them, steam them, spiralize them, or even make smoothies.
